Shopify CSV: garbled characters (’, é) after import

What's happening: Excel saved the file in Windows encoding, so apostrophes, accents and symbols turn into junk.

How to fix it

1. In Excel use Save As → CSV UTF-8 (Comma delimited), not plain CSV.
2. Google Sheets → File → Download → CSV is already UTF-8.
3. If the junk is already in the file, it has to be re-encoded, not just re-saved.
